Crispy Seed Crackers
I’m usually not much of a savory snack person — I tend to reach for something sweet instead. But these seed-packed, crispy crackers completely won me over the first time I made them. They’re crunchy, flavorful, and have that real snack factor that so many “healthy” recipes miss. You know how some healthy snacks taste a bit too… virtuous? These aren’t like that at all. They’re genuinely delicious, super satisfying, and honestly — I already see myself making them all the time.
What I also love is how nutrient-dense these crackers are. They’re packed with all kinds of seeds, grains, and plant ingredients — chickpea flour, oats, flax, sesame, sunflower, pumpkin seeds, olive oil… That’s already seven different plants in one recipe! Considering we’re supposed to aim for around thirty different plant-based foods per week to keep our gut microbiome happy, these crackers are definitely a step in the right direction.
So if you’re someone who enjoys finding healthy alternatives to classic snacks, this is one you should definitely give a try. They’re easy to make, full of goodness, and perfect for snacking throughout the week.
Ingredients:
60 g chickpea flour
60 g coarse rolled oats
30 g light sesame seeds
50 g flaxseeds
50 g sunflower seeds
30 g pumpkin seeds
1 tsp salt
2 tbsp olive oil
2 tsp black sesame seeds (for topping)
Makes: 16 pieces
Prep time: 20 minutes
Baking time: 40 minutes
Per piece:
≈ 100 kcal · 4 g protein · 6 g fat · 5 g carbohydrates
Making the Crackers:
In a bowl, mix chickpea flour, oats, sesame seeds, flaxseeds, sunflower seeds, pumpkin seeds, and salt. Add olive oil and 200 g cold water, stir to combine, and let the mixture rest for 15 minutes.
Preheat the oven to 180 °C (350 °F) and line a baking sheet with parchment paper. Stir the dough briefly, spread it evenly and thinly over the entire sheet, and sprinkle with black sesame seeds.
Bake in the center of the oven for 25 minutes. Remove and cut into 16 rectangles.
Return to the oven and bake for another 10–15 minutes, until golden brown and crispy. Remove and break along the cut lines.
